Stuffed Purple Sweet Potato

If you have watched the Blue Zones series on Netflix you know how full of powerful antioxidants purple sweet potatoes are. Here is an easy lunch idea!
Prep time: 2 MinCook time: 30 MinTotal time: 32 Min

Ingredients

  • 1 large purple sweet potato
  • Refried beans or black beans
  • 1 tablespoon diced red onion
  • Salt and pepper

Instructions

  1. Preheat oven to 400F.
  2. Wash and pierce the potato
  3. Bake for 30 minute or until a fork is easily inserted.
  4. Split open and stuff with beans, avocado, red onion, salt, and pepper.
