Greek Orzo Pasta with Fresh Dill & Mint

Greek cuisine is known for its vibrant and fresh ingredients that come together to create dishes bursting with flavors. This Greek orzo pasta with fresh dill is one of those flavorful dishes you’re going to want to make asap! The fresh dill and mint in this salad puts it over the top in freshness! You can make the whole thing while the pasta is cooking. If you want to watch the video of how I make this click here!

To make this recipe we’ll need some fresh items from the produce department. Pick up an English cucumber, shallot, fresh dill, and fresh mint. I like using English cucumber here because it’s less watery but a standard cuke works fine too. Then we’ll need some orzo, kalamata olives, roasted red peppers, and garbanzo beans. For the dressing grab some olive oil, white wine vinegar, Dijon, oregano, pink Himalayan salt, and pepper.

Heat up the water for the orzo and get going on chopping the cucumber, shallot, dill, and mint. Put all of the chopped veggies into a large bowl along with the olives, roasted red peppers, and garbanzo beans. Whisk the dressing ingredients together in a small bowl. When the pasta is done, add it to the bowl and toss with the dressing. This just might become your new favorite weeknight dinner!
