Air Fryer Sweet Potato Rounds

Trust me when I tell you these air fryer rounds are unbelievably delicious! The combination of the toasted sweet potato with fresh guacamole is a match made in heaven. These make a great snack, appetizer, or lunch. You can add some white beans to the guacamole mixture if you want to add more protein. I love eating lots of sweet potatoes because they have lots of Vitamin A which is great for glowing skin! Since vitamin A is fat soluble, we need to eat it with a little fat to get the best vitamin absorption — thus pairing it with avocado is the ticket!

To make this recipe, you’ll need to start by picking up a large, sweet potato. I always buy organic sweet potatoes so I can eat the skin which contains a lot of the vitamins and minerals. Then while you are in the produce aisle, grab some ripe avocados, red onion, cilantro (I also like to buy this organic), a jalapeno, and a lime. The spices we will be using are oregano, pink salt and garlic granules (I am obsessed with this type). The last thing you need is avocado oil and I prefer this over olive oil because it has a high smoke point, and we are cooking at high heat here.

The first step is to slice the sweet potatoes. We want them pretty thick, so they hold the guacamole, so slice them about 1” thick. Then take a sharp knife and make some vertical cuts about ½” inch apart being careful not to cut all the way through. Then turn the round and make another set of cross cuts so you have several small squares. Check out the reel on my Instagram if you need a visual.

Then mix up the oil, oregano, and salt, and brush it over all of the rounds so it gets into the crevices created by our cuts.

Now it is air fryer time! Place the rounds in a single layer in the air fryer. I use the Drew Barrymore air fryer and I love it. The size is perfect, and it is the prettiest one out there for sure. I also use parchment paper sheets in the basket to help with cleanup. Set the temp to 400 F and cook for about 25-30 minutes until the potatoes are cooked through.

While they are cooking, whip together the guacamole. Mash the avocado, then add in the red onion, cilantro, lime juice, jalapeno, garlic granules, and salt.

When the rounds are done, top with the guacamole and serve!

Air Fryer Sweet Potato Rounds

These sweet potatoes topped with guacamole are a great lunch, snack or appetizer. If you don't have an air fryer you can use the convection setting on your oven!

Ingredients

  • 1 large sweet potato
  • 1 tablespoon avocado oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pink salt
Guacamole
  • 2 avocados
  • 1 tablespoon diced red onion
  • 1/4 cup diced cilantro
  • Juice of one lime
  • 1/2 jalapeno, diced
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon pink salt

Instructions

  1. Slice the sweet potato about 1 1/2" thick. Then make cuts crosswise and lengthwise in each round without cutting all the way through.
  2. Mix up the oil, oregano and salt. Brush on each round.
  3. Air fry or convection bake at 400 F for about 25-30 minutes or until the potatoes are cooked through.
  4. While they are cooking, make the guacamole by mashing the avocado and combining everything together.
  5. Top each round with guacamole!
